VINEYARD
The "De Miranda" vineyard, which we own, is
located on the Canelli hills
in one of the best positions for growing Moscato d'Asti grapes.

Number of plants per hectare: 7000
Exposure: south, south-west
Average altitude: 300 m a.s.l.
Soil: clayey marl.
VINTAGE
From the second half of September onwards,
selecting over-ripe grapes. Average yeld per ha.: 35 hl.
VINIFICATION
The grapes, harvested in boxes, are further selected
in the cellar on moving belts;
subsequently some of these grapes are lightly macerated cold and then
pressed to obtain the must.
The rest is dried in well ventilated rooms.
The first fermentation to reach 6 degrees of alcohol takes place in
Allier & Tronçais casks
for a period of four months. The wine is then siphoned into stainless
steel vats and
cold stabilised. It is then bottled along with special selected yeasts
to create the sparkle.
This is done in the deep, chilly Canelli cellars.
BOTTLING
From January to March following the vintage.
REFINING
Remains on the yeasts for a minimum of 2 years before
drawing off.
Remuage performed exclusively by hand, on the traditional racks.
Drawn off in small quantities according to demand.
PHYSICAL PROPERTIES
Golden straw colour with a fine, persistent and creamy
perlage, intense and unmistakable aroma,
sweet and delicate taste.

It is a perfect accompaniment to creamy desserts such
as creme brûlée and zabaglione and oven baked
ones such as tarts and biscotti.
