very slow and low temperature alcoholic fermentation for 3 months in steel vats
almost left 2 years on yeast in tank

Tasting Note: this delicious wine is fermented and aged in steel and kept on its yeast for almost 2 years, resulting in a delightful potion of fresh grapey Moscato, laden with pair and honey, mineral and herbal complexity

PH-level: 3.43
Total acidity: 5.9 g/lt
Alcohol: 8.0 %
Production quantity: 6.000 bottles
Pairings: ideal as aperitif, desserts and strong cheeses
